There’s a particular kind of madness that takes hold once you’ve pulled your first truly great sourdough loaf from the oven. The crust shatters when you press it. The crumb opens up in those irregular, glossy pockets you’ve been chasing for months. And then you spend the next six baking sessions trying to replicate it and failing in ways you can’t fully explain. That’s the sourdough obsession in its purest form. It’s not really about bread anymore. It’s about control, or the illusion of it.

It’s what separates a loaf that looks homemade from one that looks like it came from a serious bakery. The Dutch Oven: Where Steam Becomes a Weapon
Every serious sourdough baker eventually arrives at the Dutch oven, and most never leave. The logic behind it is almost embarrassingly simple: professional deck ovens inject steam into the baking chamber during the first stretch of the bake, which keeps the outer surface of the dough pliable long enough for the loaf to achieve maximumoven spring. A lidded cast iron pot replicates this by trapping the moisture the dough releases itself.
But not all Dutch ovens are created equal for this purpose. A round5-quart is the standard recommendation, and it works well for most batard or boule shapes. A Banneton Worth Trusting
The proofing basket banneton or brotform, depending on which tradition you’re borrowing from does more than hold the shape of your loaf during its final rise. The difference between a mediocre banneton and a well-made rattan one is subtle until you’re trying to score a dough that’s slightly overproofed at room temperature and then it’s the difference between a loaf that holds and one that spreads.
Round9-inch bannetons handle most boule-sized loaves. Oval ones, roughly 10 by 6 inches, suit batards and give you more surface area for decorative scoring patterns. A linen liner is worth keeping on hand even if you prefer the spiral pattern some doughs, especially high-hydration ones above 80%, stick to bare rattan no matter how well you’ve seasoned it with rice flour.
That brings up the flour: always rice flour for dusting, never all-purpose. Rice flour doesn’t absorb into the dough the way wheat flour does. It stays on the surface and creates a non-stick barrier that lets your loaf release cleanly every single time.
The Lame: Because a Razor Is Not Optional
Ask someone why their sourdough crust looks patchy and irregular, and the answer is often bad scoring not bad dough. The score controls where the loaf tears open duringoven spring. A score that’s too shallow, or made with a dull blade, drags through the surface tension instead of cutting cleanly, and the crust tears wherever it wants rather than where you want it.
A lame (pronounced “lahm”) is simply a curved or straight handle designed to hold a double-edged razor blade at a precise angle. The curvature matters. A curved blade, held at roughly30 to 45 degrees, creates that classic ear the raised, crackling lip that defines a well-scored artisan loaf. A straight blade held perpendicular works better for decorative patterns where you want cleaner symmetry.
Brands like Bread Lame and WireMonkey make versions with wooden handles that feel like actual tools rather than afterthoughts. The UFO lame from WireMonkey has developed a following because its design keeps the blade tight even as it dulls, and the blade replacement takes about four seconds. Blades are cheap. Change them more often than you think you need to every three to five loaves is reasonable if you want consistent results.
One underrated trick: chill your shaped loaf uncovered in the refrigerator for at least an hour before scoring. Cold dough has more surface tension, and the razor glides through it rather than dragging. It’s one of those adjustments that feels minor until you try it.
A Kitchen Scale That Doesn’t Lie
Baking by volume cups and tablespoons is the enemy of consistency. A cup of flour can vary by 20 to 30 grams depending on how it was scooped, how humid your kitchen is, whether the bag has settled. At high hydration, those variances compound into the difference between a dough that handles well and one that sticks to every surface it touches.
A scale that reads to1-gram increments is sufficient for most baking. For those who like to track starter activity precisely or work with small-batch levains, a jeweler’s scale reading to 0.1 grams is worth having on the side. That’s the whole job.
What good scales actually unlock is the ability to bake from ratios rather than recipes. It’s the kind of freedom that makes the hobby feel less like following instructions and more like actually understanding what you’re doing.
The Thermometer You’ll Use More Than You Expect
Fermentation is temperature-sensitive in ways that most home bakers underestimate. Bulk fermentation for a typical 75% hydration sourdough might take four hours at 78°F and seven hours at 68°F. That’s not a minor difference it’s the difference between a properly developed dough and one that’s either underfermented (dense, gummy crumb) or overfermented (slack, impossible to shape, flat in the oven).

Use it to take the temperature of your dough at the start of bulk, and again before shaping. Use it to verify your oven is actually at temperature most residential ovens run 25 to 50 degrees off their indicated setting, which is a large variable when you’re trying to maintain500°F for an initial burst.
Some bakers also use an infrared thermometer to check the surface temperature of their cast iron before loading the dough. It’s not strictly necessary, but once you’ve done it, you start to realize how much thermal variation exists between “preheated” and actually ready.
Proofing Bags and the Cold Retard
Cold retarding slowing the final proof by refrigerating the shaped loaf overnight has become standard practice among home bakers for good reason. It deepens flavor, makes scheduling more flexible, and produces a tighter, more scoreable surface. But leaving a shaped loaf uncovered in the refrigerator dries it out, especially near a fan.
Proofing bags, or large food-safe plastic bags that accommodate a banneton, solve this with minimal fuss. IKEA’s large ziplock bags work fine. So do the purpose-made ones from baking suppliers. The goal is to create a slightly humid microenvironment around the dough without trapping so much moisture that the surface stays wet and loses that tight skin you worked to build.
The cold retard also interacts with the crust in an underappreciated way. Loading a cold, firm loaf into a screaming-hot Dutch oven creates a more dramatic thermal shock, which accelerates the initial burst and tends to produce a more pronounced ear and deeper score definition. It’s not magic it’s physics. But it feels like magic the first time it works exactly right.
The gear matters. Not because good tools replace skill, but because at the level where you’re chasing a specific quality of crust that particular crackle, that deep mahogany color, that audible shattering when you press it the margin between a great bake and a disappointing one is often a thermometer reading you didn’t take, a blade you used one loaf past its prime, or a Dutch oven that was only kind of hot when it needed to be completely, uncompromisingly hot.
