There’s a particular kind of disappointment that steak lovers know well. Commercial broilers operate at temperatures that most home ovens simply cannot reach, and that extreme heat is responsible for one specific thing: the Maillard reaction, the chemical process that creates the deeply savory, almost caramelized crust on a great steak.
But here’s what most people miss. The crust is only half the equation. The interior that rosy, tender, juicy center requires something completely different. The Tool You Actually Need

The pan temperature is worth mentioning, too. “Hot” is not hot enough. If the steak makes a gentle sizzle when it hits the pan, the pan isn’t ready. You want violence. You want a sound that makes you take a step back.
One More Thing Worth Saying
The quality of the steak itself does matter, just not in the way most people think. You don’t need the most expensive cut.
